Danda Biryani
INGREDIENTS


  • Mutton (Bone Piece) 1-kg
  • Ghee / Onion (sliced & browned) 1/1 - cup each
  • Jazaa – Premium Basmati Rice 3/4 - kg
  • Black Zeera 1-tsp
  • Whole Garam Masala 1-tsp
  • Lemon Juice 2-tsp
  • Onion (sliced & browned) 1/2 -cup
  • Ginger / Jullieve / Ginger / Garlic / Salt 2-tbsp each
  • Chilies (green) 20
  • Jaifel / Javitri 1/4 - tsp each
  • Ilaichee Powder / Saffron (powdered) 1/2 -tsp each
  • Yogurt 1-cup
  • Water (to boil) 8-cups
  • Yellow color 1/4-tsp
  • Condensed Milk 3-cups

DIRECTIONS


Boil Mutton with ginger plus garlic and green chilies till water dries, add ghee and fry the meat. Beat yogurt with Jaifel, Javitri, ilaichee and shredded ginger. Pour over the meat, 8 green chilies and boil Jazaa aromatic “Premium Basmati” rice in 10 to12 glass water with 2-tbsp salt, 1-tsp black zeera + 1-tbsp whole garam masala and put 2-tsp lemon. Put Jazaa Rice over meat and yogurt, heat ¼ cup oil and put over rice: Minimum 1 cup yogurt plus yellow color & Saffron and put over rice and put on simmer (Dum).
