Zafrani Biryani
INGREDIENTS


  • 3/4 -kg Jazaa Sela-Gold Rice
  • 1-kg Mutton (Bong Piece) or Chicken
  • 1-tsp black zeera
  • 1-tsp Whole Garam Masala
  • 2-tsp Lemon Juice
  • 1/2 - cup Ghee
  • 1/2 - cup Onion (sliced & browned)
  • 2-tsp each Julian / Salt / Ginger / Garlic
  • 20- Green Chilies
  • 1-cup Yogurt
  • 10-glasses water
  • 1/4 - tsp each  Jaifel / Javitri / Yellow color
  • 1/2 -tsp Elaichee powder
  • 1/21 –tsp Saffron (powdered)
  • 1/4 - Cup Oil

DIRECTIONS


Boil Mutton with ginger, garlic and green chilies till water dries, add ghee and fry the meat. Beat yogurt with Nutmeg (Jaifel), Mace (Javitri), Cardamom (ilaichee), shredded ginger and pour over the meat 8 green chilies.

Boil Jazaa SELA Gold rice in water with salt, black zeera, whole garam masala and pour lemon juice on top. Put rice over meat and yogurt. Heat oil and put over Jazaa rice along with yogurt, yellow food color, saffron and place over rice and let simmer (Dum).
